  Suggestions and helpful hints for using AuraPro with your recipes
  AuraPro comes frozen and it is best to thaw it in the refrigerator, keeping it cold until cooking. This will give you a better texture.  
       
  You may want to oil or wet your hands in cold water when making patties and other forms.  
       
  AuraPro is soft when cold, firm when warm. Keep this in mind when cooking. It is a low fat food and requires oil or water when you handle it.  
       
  AuraPro is firmer with less moisture in it and softer with more moisture in it. Baking, sautéing, poaching and steaming all affect the moisture and texture, so you may have to experiment with it.  
       
  Oil the outside of AuraPro when placing it on the grill or spray the grill. When baking, oil the pan. We spray burgers, breast shapes, medallions and patties prior to grilling.  
       
  AuraPro requires about half the cooking time as meat (thawed) and about 10% less time when cooking from a frozen state. Be sure not to overcook, as it will dry out. It’s a good idea to cover AuraPro loosely when cooking in an oven.  
       
  We do not use egg yolks because they’re unnecessary and make the dishes too soft. Nor do we incorporate bread crumbs (except in recipes for crab cakes), as they compromise the texture of the product. If you want to incorporate vegetables in your recipes, use roasted vegetables, or raw vegetables sparingly. Raw vegetables release a lot of moisture, which softens the product.  
       
  Use fresh herbs and spices as you would in a recipe made with animal proteins. For salts and peppers, use 15-30% less in comparison to meat recipes.  
       
  In casseroles where sauces, fresh vegetables, pastas, etc. are used in combinations, remember that the vegetable protein is dense and will take up some moisture. For example, in lasagna, you do not have to squeeze out the spinach nearly as much. Or, you may want your tomato sauce to have more liquid so your casserole won’t be too dry.  
       
  Any stuffed fresh vegetable is great for AuraPro hot appetizers because the vegetable provides moisture and flavor when baked.  
       
       
  Some serving suggestions:

Chili: We sauté the ground burger and add it to the chili last. This way it maintains a nice texture and stays chunky. For a lower fat version, spread the ground burger on an oiled sheet pan and cook it for 15 minutes, then crumble it into the chili while it is still warm.

Meat Loaf: We find that adding dehydrated onions and peppers and glazing the meat loaf is a wonderful approach to great and easy meat loaf. If you are using fresh vegetables, cook them first. They will release moisture into the meat loaf and make it soft.

Chicken: This is easily formed into little nuggets, strips and patties or any shape you want. We form it into a breast shape and slice it from there. Keeping everything cold will ensure the best texture. It can be fried, sautéed, baked, steamed and even poached.

Crab: Just make your favorite crab cakes for appetizers or for crab cake sandwiches.

Pork: Spread it onto a sheet pan and bake it at 375 for 15-20 minutes. Shred it while warm and cover it with your favorite BBQ sauce for a great sandwich. It can also be spread out and shaped into a tenderloin, stuffed or plain. Just baste, season and bake.

Sausages: AuraPro Meat-Free sausages are lightly flavored and can be used as traditional sausage for patties, stuffed into mushrooms, on pizza (Italian) and in many other sauces and stuffings.
